Apples, apples, and more apples.  On our farm we grow 20 acres of apples including 26 different varieties.  All of our trees are semi dwarf, which means the trees only grow to about eight to ten feet tall.  Our orchard is high density meaning we have about 500 trees planted per acre.  The trees are easy for people of all ages to pick apples.  No ladders are needed.

                Apples are best stored in the refrigerator.  Water can be sprinkled on top to keep the humidity around the fruit high.  This will help prevent the fruit from drying out.

                All of our fruit is hand picked and stored in cold storage kept at 33 deg. F and high humidity.  Before arriving at our farm store the fruit is washed and sorted.  The apples, which are classified as “seconds”, are used to make our fresh apple cider.  Squeezed apples – pressed through heavy cloth – cooled and put into a container.  The secret is making it FRESH!  We make it ourselves – right here on our farm in Water Mill.  The flavor is unbeatable.

                The best apples to use for applesauce are a blend of all the different varieties available at the time.  The “seconds” also make great applesauce.
